Suggestions for a delicious home-made Tahini paste

The Tahini paste is a savoury cream made of sesame seeds and oil. It is widely used in the Middle-Eastern and Mediterranean cuisine. It is the key ingredient in the hummus recipe, but it may be used in desserts as well. It may be commonly found in supermarkets and stores but it is such an easy and quick preparation that it may be rapidly prepared at home. Furthermore, if you do it yourself, it will be much healthier and tastier!


  • 100 gr white sesame seeds
  • Sesame oil
  • Salt

Toast the sesame seeds in a large non-stick frying pan over low heat, stirring frequently until they get golden brown (about 2-3 minutes). Be careful, sesame seeds burn very easily. Let them cool a few minutes, then add them to a food processor. Add salt and oil gradually. Process the mixture into a paste, scraping down the sides. Add more olive oil until you reach the desired consistency.  


Do not process the sesame seeds while they are still hot, otherwise they will burn and will get a smokey flavour. For a smoother texture you may mash the sesame seeds with a pestle as soon as they have cooled before you process them in the food blender.

If you are making Tahini for a dessert, you may avoid adding salt.
